Jacob Elkoubi, a promising researcher in the fields of biotechnology and biological sciences, holds both a bachelor's and a master's degree in biotechnology from the prestigious institution, Tel Hai College. Throughout his academic studies, he specialized in life sciences and exact sciences, particularly in microbiology, genetics, molecular genetics, immunology, and stem cells – complex and esteemed fields. Alongside his impressive academic achievements, Elkoubi developed excellent teaching and guidance skills, conducting courses and leading laboratory sessions for children and adolescents, as well as supervising a variety of high-level academic projects and scientific research in various areas such as microbiology and fermentation, food technology, medicinal plants, and the development of various industrial products. Currently, Elkoubi continues to delve deeply into the field of food science, examining and evaluating the potential of plant proteins for the food industry as a substitute for animal-derived proteins, while pursuing continuous learning and specialization in additional areas.
